Like Italy, southern France, the Middle East, Greece, etc., Albania also has a rich and flavorful traditional Mediterranean cuisine.
Casserole with Yogurt and Lamb is a traditional food, typical from the areas of central Albania, mainly the city of Elbasan. The special of this recipe is the simultaneous boiling and baking with slow fire in the oven. The original old recipe is different from today’s , since in the original recipe yogurt cream is only used for marinating and then it is thrown away. This type of casserole became famous during the Ottoman Empire because Mehmet II liked it. But the kitchen maids decide to use yogurt during cooking, thus creating a new recipe.
Nowadays, the new recipe is used the most, almost in every Albanian home while the old recipe is traditionally cooked on Albania’s independence day !
